250 g wholegrain white flour
1 teaspoon of baking soda
1/4 teaspoon of salt
100g unrefined cane sugar
2 organic eggs
500g mushed overripe bananas (6-7 bananas)
Cream butter with cane sugar. Add eggs and bananas (mushed previously with a fork) and mix together. In a separate bowl combine flour, baking soda and salt. Stir wet ingredients into the dry ones and mix until moistened.
Pour batter into a loaf pan and place in a preheated oven (175 degrees Celsius) for 40 minutes or until toothpick comes out clean.
